Thanksgiving Nachos!

So, I have LOADS of leftover stuffing, meatloaf, Tofurkey Roast, mashed potatoes, and gravy. Like all y’all, I didn’t really want to go old school and make ‘garbage bin’ style sandbos with all of the leftovers – been there, done that. After wondering what else I could do with this smorgasbord of food, I had an “a-ha!” moment. Everything tastes super and insanely good when baked over tortilla chips. I added some nooch and some Daiya cheddar, heated the oven, and was left with an orgasmic, mouth melting, tongue drooling plate of Thanksgiving Nachos. Everything was vegan and gluten free with the exception of the Tofurkey, too! We pretty much killed it in the food department this year for T-day. Crazy amounts of good wine, good food, and superb people. I loved hosting my fam, going wine tasting, bowling, shopping, restaurant-ing, and garage-game-playing for the week they were here. I miss them already! Here’s to hoping for version 1.3 for 2018’s T-day!

I hesitated to post this because I made these Thanksgiving Nachos at night with zero natural light. Obviously, I never filter my food pics but I had a thought. Why did I start this blog? The answer was simple: To start a conversation about food, to share ideas, and to encourage others to do the same. Now, I have been trying a lot harder as of late to only post dope pics of my grub, however, I decided sharing this idea was more than worth it. I filtered these night time photos with the ‘transfer’ filter. Just fun and good eats, sharing of ideas, and of course, as my food philosophy and blog philosophy state: “Like the mind, food is a terrible thing to waste.” This post is a prime example of ‘waste not!’ So, on that note… cheers to the holidays, good food, and good people!

Thanksgiving Nachos!
A delicious mess of Thanksgiving leftovers piled on top of tortilla chips to make the most incredible nachos, and T-day leftover dish ever! Vegan as well!

Ingredients
  1. 1 bag of tortilla chips
  2. Stuffing (I used homemade vegan)
  3. Mashed potatoes (I used homemade vegan)
  4. Meatloaf (I used homemade vegan)
  5. Tofurkey Roast
  6. Gravy
  7. Nooch (nutritional yeast)
  8. Daiya Cheddar - shredded
  9. Hot Sauce - optional
Instructions
  1. Preheat oven to 365f
  2. Evenly layer all of the ingredients on top of the tortilla chips except the hot sauce
  3. Cook for approximately 10 minutes or until gooey enough for you!
  4. Add hot sauce to taste if you'd like
  5. Enjoy!
Notes
  1. If I would've still had any left over vegan pumpkin mac n' cheese, I most certainly would've thrown that on there as well. Use any/all leftovers that you may have!
